Overnight oatmeal

Right right. Back to this whole food thing. I'm still trying to get the whole family eating better. We've had some successes, little Loo eating raw spinach leaves and roaring like a dinosaur and some failures like me drinking Coca Cola for breakfast instead of my planned on green smoothie because the blender was dirty. Anyhoo I'm still trying hard to break my two coffee's for breakfast routine.

Here's what I've been enjoying lately.



Mmmm. Overnight oatmeal, who knew? Simple to make and super delicious. Here's my favourite recipe so far which I adapted from this one on Oh She Glows. You can visit there for tons of other variations including some summer oatmeal parfaits.

  • 1/3 cup oatmeal
  • 3/4 cup milk
  • 1 sliced banana
  • 2 tbsp ground chia seeds
  • 1 tsp vanilla extract

Mix it all together at night then put it in the fridge. In the morning eat cold or warm up and add a drizzle of maple syrup. Delicious!

The best and worst part is that you have to make it the night before. As long as I remember to take the three minutes to mix it up at night, my breakfast is ready when I wake up. An almost foolproof way to make sure I eat in the morning.
