Potato chips DIY

I don't often post about food. Mostly because I don't take good food pictures and because I go 100 miles an hour in the kitchen. It's hard to stop and take pictures. This discovery was just too good not to share. Loo's kidney troubles have forced a low sodium diet on us. I'll try to save my sodium rant for another day....

I bought a low sodium cookbook last week and it had a recipe for microwave potato chips. Homemade chips! The best part? All you need is 2 plates, 1 knife, some spices, a potato, a microwave and 10 minutes!


Slice your potatoes. Spray some PAM or rub a bit of oil on a plate. Lay potato slices on the plate and add some spice (Mrs. Dash, dill, pepper etc.) Place the second plate upside down to act as a lid. Microwave for 8-10 minutes. Remove with oven mitts, the plates will be hot.

 I thought it was too good to be true but low and behold....


Crispy, crunchy, tasty, low sodium potato chips. They're even delicious with no spice. We've tried sweet potato also yummy. I've read that apple works too.


Go ahead and make some, it's worth the ten minutes!
